Are you ready to take your BBQ game to a whole new level? I’ve got a modern twist on classic ribs that’ll blow your mind — no hunting required.
Introducing Sweet Peach Bourbon BBQ Corn Ribs. This campfire treat is the perfect way to eat your veggies while indulging in the rich, smoky flavors of Bourbon BBQ ribs.
Author:This recipe comes to us from Casey Bard, CEO of Tacticalories Seasoning Co. and longtime collaborator and friend of Montana Knife Company.
Ingredients
- 4 ears of corn on the cob
- 2 Tbsp. vegetable or olive oil
- 2 Tbsp. Adirondack Smoke BBQ Seasoning
- 1/2 cup Sweet Peach Bourbon BBQ Sauce
- Green onions
Directions
Prepare the Corn Ribs: Stand each ear of corn vertically on your cutting board, wide end down. Use your favorite cooking knife to slice the ear in half lengthwise, then cut each half into quarters to create riblets. Place the riblets in a disposable aluminum pan or baking dish. (Make sure to clean your knife properly when you’re done!)
Heat the Grill: Fire up your grill and set it to medium-high heat (around 275°F if you use a recteq RT-700 like I do).
Season the Ribs: Drizzle the corn riblets with oil, tossing to coat evenly. Sprinkle a generous amount of Adirondack Smoke BBQ Seasoning. Then, brush on a layer of that irresistible Sweet Peach Bourbon BBQ Sauce.
Get Grilling: Place the pan of sauced-up corn riblets on the grill grates and close the lid. Let them cook for 30–45 minutes, until the edges start to char and caramelize and the corn kernels are crisp-tender. The smell alone will have your mouth watering.
Final Touches: Transfer those Bourbon BBQ ribs to a platter, brush with a bit more Sweet Peach Bourbon BBQ Sauce, and sprinkle some sliced green onions.
Recipe Note
What to Pair With Sweet Peach Bourbon BBQ Ribs
Sides
When building a menu, choose sides that complement your main dish’s flavors without overwhelming them. These three foolproof options will take your Bourbon BBQ ribs to the next level:
- Tangy Coleslaw: Whip up a tangy coleslaw with shredded cabbage, carrots, and a dressing made with apple cider vinegar, mayo, and a touch of honey. The vinegar’s acidity will cut through the peach bourbon sauce’s sweetness.
- Buttery Cornbread: Serve up some warm, buttery cornbread to soak up the delicious sauce from the Bourbon BBQ ribs. You can keep it simple with a classic recipe or mix things up with add-ins like jalapeños or cheddar cheese.
- Grilled Potato Salad: Toss some halved baby potatoes with oil, salt, and pepper, then grill them until they’re tender and slightly charred. Chop them up and mix them with some crispy bacon, sliced red onion, and a tangy dressing made with mayo, Dijon mustard, and a splash of hot sauce.
Drinks
When you chow down on these Bourbon BBQ ribs, you’ll want a drink that can stand up to the bold flavors. These thirst-quenching options will take your meal to the next level:
- Whiskey Peach Smash: Muddle fresh peach slices, add a shot of your favorite bourbon, a squeeze of lemon, and a dash of simple syrup. Top it off with some ice and a sprig of mint for a cocktail that’s a little sweet, a little tangy, and completely delicious.
- Crisp Hard Cider: Look for a dry cider that’ll cut through the BBQ sauce’s richness and refresh your palate between bites. Bonus points if you can find a peach or apple-peach cider to tie the meal together.
- Ice-Cold Beer: Opt for a beer with sweetness and a clean finish, like a pale ale or a lager. The carbonation will cleanse your palate, while the subtle hoppy bitterness will balance out the Bourbon BBQ ribs’ smokiness.
With any of these options by your side, your Bourbon BBQ ribs are sure to shine. So fire up that grill, mix up a refreshing drink, and get ready to feast on the ultimate summer BBQ spread. Your taste buds (and your guests) will thank you.
